L'Esprit Nature Sparkling Saumur, Ackerman

From Ackerman’s most prized Samur vineyards near the Collegiate of Puy Notre-Dame, an area recognized for producing high quality Chenin Blanc and Cabernet Franc for sparkling and still wines. For this cuvée Chenin Blanc is harvested at full ripeness. Bio-protection principles - protecting the crop with microorganisms that naturally prevent the development of unwanted yeasts - are followed in the cellar. Only sulphur dioxide naturally produced during fermentation is permitted; this reduces the total levels but demands impeccable winemaking practices, to avoid oxidization and maintain freshness in the wine. Following secondary fermentation the wine rests on fine lees for twelve months to preserve the fresh fruit aromas. 

Pretty nose - classic Chenin with honey, lanolin and stewed apple. Bright acidity is underpinned with a good depth of flavour. Fresh, crisp and pure on the finish with hints of green apple. Try with many types of fish - grilled shrimp or octopus, sushi, pan fried scallop or lemon sole. Also works with lemon based desserts - a fine lemon tart, zesty mousse or a pear sorbet. NO SULPHITE WINE.
