Antoine Simoneau cultivates a 55 hectare vineyard on the hills above the River Cher at Domaine de la Rablais. The property has been in his family since 1790, just after the revolution, before which it belonged to the Seigneury of Chennonceaux.
Grapes are de-stemmed (not crushed) and put into an open-top fermenter. The wine is drained away from the skins and moved into steel vat for maturation.
This pinot noir is a classic Loire style with a lovely fruity nose. There is gentle raspberry and blackcherry fruit and a touch of black olive savouryness with fresh acidity and softening tannins.
